At the heart of The Monk’s next chapter is Finlay (Fin)—a familiar face to many, and someone whose journey with the restaurant began all the way back in 2018.
She first met Simon and Carla at The Monk in May that year, instantly clicked with the pair, and was soon offered a chef position. By early 2019, she had become head chef, helping shape the kitchen’s rhythm and soul until early 2020. After a short break, Fin returned in 2021 to take on the role of front of house manager, before quickly stepping up to restaurant manager—a position she held with the same heart and care that defines The Monk.
In July 2025, Fin took over the reins from Simon and Carla, becoming the new owner of The Monk. This milestone was made possible thanks to the continued entrepreneurial spirit of her grandfather, whose legacy lives on through her family’s many businesses. It’s a new era, but one built on the same foundations of warmth, quality, and character.
A qualified chef with a Level 2 WSET qualification in wine, Fin brings both passion in the kitchen and knowledge on the floor. She’s been a core part of The Monk’s story for the past seven years, and her deep love for the place—and the people—runs through everything she does.
Importantly, nothing fundamental is changing. The soul of The Monk remains the same. The relaxed, welcoming atmosphere. The thoughtful, seasonal menu. The familiar faces behind the bar and in the kitchen. The great wine list, curated with care. And of course, that feeling you get when you walk in and know you're in for something special.
The Monk’s African-inspired interior, with its Kenyan touches and textured, quirky soul, will stay just as it is—warm, grounded, and full of character. Fin hopes one of these days to visit East Africa to reconnect with that inspiration firsthand, and ensure the authenticity continues to shine. (And yes, she may raise a glass or two while she’s there—for cultural research, obviously.)
Simon is still around—popping in from time to time and continuing to oversee the wine list with his trademark passion and wit. Carla also lends her magic to the kitchen now and then, supporting the team in her quietly brilliant way.
Together, they’ve passed the torch to someone who not only shares their vision, but has lived and breathed it for years.
Fin looks forward to welcoming back loyal guests, and inviting new faces to experience the unique mix of warmth, flavour, and friendliness that makes The Monk what it is.
